The peaberry in this blend makes this coffee a lighter than usual medium roast. Peaberry beans, which are a natural mutation resulting in single-seeded rather than (flattened) double-seeded beans. Peaberry coffee tends toward increased acidity, greater complexity amongst the upper aromatic ranges of the flavor profile, and is somewhat lighter in body than coffee made from normally shaped beans (even coffee roasted from the very same batch). This coffee featured Brazilian peaberries. The beans in the bag have an aroma that is softer with notes of citrus, stone fruit and chocolate. Grind the beans fine for an espresso machine, releasing a coffee perfume with predominant citrus and fruit notes. The coffee liquor has a soft, creamy texture and flavor, with slightly honeyed lemon notes, hints of peach, almond and toffee and a slightly sweet maple finish. The coffee, without any noticeable bitterness, was well-balanced and exceptionally smooth, and featured a pleasant astringency that gave it an appealing brightness. Candy Tiger Breakfast Blend has some unusual characteristics that differentiates it from run-of-the-mill coffees, mostly from its peaberry component.
