Suggest once the package is opened you repackage it in a plastic jar with a screw-on lid and refrigerate; maybe tuck a piece of bread in there too, so to retain moisture- every few days change bread slice (probably removed one will be good toasted). If you prefer coconut dried for decoration, to sprinkle on things, or lightly toasted itself this brand will work too.
